Vin de Pays d'Attique - dry white wine
Savatiano
Grapes are bought from strictly selected vineyards in the foothills of Mount Pendeli, northern Attica at an altitude of 450m. In this area where snow falls in winter and the summer nights are cool, the Savatiano grape ripens slowly, retaining its acidity to give a fresh, fruity wine. Harvest is usually between 15th-25th September.
Sand and clay with limestone subsoil.
90hl/ha
Grapes are picked in small baskets and transported directly to the winery. Cold maceration for about 12 hours is followed by the Willmes pneumatic press. Preliminary debourbage and fermentation at controlled temperature of 17°C. Wine is bottled and sold within the year.
Alcohol 11.5%vol.
Total acidity 5.3g/l.
Residual sugar less than 1.0g/l.
Bright white-yellow colour with green highlights. A delicate nose of fresh fruit and orange blossom. Good fruity impact on the palate, fresh taste with good acidity. Excellent long finish of fruit. Served at 10-12°C. Enjoy it as aperitif, with seafood as well as with white sauces. Interesting is the combination with creamy pasta dishes and a variety of goat cheese.
