George Kokotos
Dry Table white wine
Roditis
Selected vineyards at mountainous Aigialeia. The vineyards are situated at an altitude of 450m. giving the grapes the opportunity for a perfect maturation full of the characteristics of the variety. Plentiful winter rain and dry summers. Cool summers-due to altitude- and north facing slopes give slow ripening. Harvest is usually between 15th-25th September.
60hl/ha
Grapes are handpicked and transported in small baskets. Classic white vinification, with mild pressure in a Willmes pneumatic press. After a preliminary debourbage, fermentation takes place in stainless steel tanks at controlled temperature of 17°C, where the wine remains on the lees with frequent ‘batonnage’ for about 8 months.
Alcohol 11.5%vol.
Total acidity 5.5g/l.
Residual sugar 0,8g/l.
Beautiful bright straw-yellow colour with goldish highlights. A complex nose develops during ‘batonnage’ with ripe fruit (melon), earthly tones, fresh-baked bread and honey. Generous mouth with buttery texture, extremely aromatic, expresses a Mediterranean temper. Serve at 10°C with poultry, oily fish, and smoked fish as well as with Mediterranean dishes.
