Grapes are handpicked in small baskets. Cold maceration of approximately 15 hours is followed by gentle pressing in a Willmes pneumatic press. After a preliminary debourbage, yeasts are added and the must is transferred to 225l oak casks-which are 50% new every year- for fermentation at controlled temperature of 17°C. The wine remains in casks for approximately 6 months before bottling.
Alcohol 12.5%vol.
Total acidity 5.5g/l.
Residual sugar less than 1g/l.
Bright yellow-gold colour, with strong goldish highlights. Its aromatic character is expressed with elegant aromas of exotic fruits (mango and pineapple) and ripe grapes. Generous mouth with buttery texture and balanced acidity give strong length. Serve at 12°C with rich fish, pâté and with dishes of cheeses. Excellent combinations with pork with plumps and stew salmon.
