Grape Varieties: Cabernet Sauvignon (90%) Merlot (10%)

Vineyard: The vineyards of Ktima Kokotos are at an altitude of 450m. on the N. Eastern slopes of Mount Pendeli. The area has long cool winters, usually with at least one snowfall. In summer the nights are cool, but fine weather persists well after harvest, which is usually between 10th - 20th September.

Soil: Sand and clay with limestone subsoil

Yield: 40 hl/ha

Vinification: Grapes are handpicked and transported in small baskets. Classic red winemaking with fermentation in stainless steel tanks, with a temperature rising to 28°C. Maceration is for approximately 8 days; the juice then being free runs off the skins. The wine is aged in 80% new French oak casks of 225l for approximately twenty months, with a further eight months in bottle before release.

Residual sugar 1.5g/l.

Tasting Notes: Strongly deep red colour with bright ruby highlights. A complex bouquet of ripe fruits, dry plumps, smoke, pepper and black chocolate. Good tannic structure with well balanced acidity, elegant and long on the finish. Serve at 18°C with lamb, richly flavoured stews, roast meat and game.
