Grapes are bought from selected vineyards in the foothills of Mount Pendeli, northern Attica at an altitude of 450m. In this area where snow falls in winter and the summer nights are cool, the Savatiano grape ripens slowly, retaining its acidity to give a fresh, fruity wine.

Grapes are picked in small baskets and transported direct to the Willmes pneumatic press. Preliminary debourbage and fermentation at controlled temperatures of 17°C. Wine is bottled and sold within the year.

Total acidity 5.0g/l.
Residual sugar less than 1g/l.
Bright white-yellow colour with green highlights. Elegant aromas of lemon blossom and fruits emphasizing on apple are present in the nose. Soft mouth with balanced acidity gives a good fruity impact on the palate and an excellent long finish. Serve at 8-10°C, as an aperitif or with a great variety of cold dishes.
